Verb + 过
The idea: 过 is the verb "pass, go through". Stuck to another verb, it says you have been through that experience: it's now part of your life story. That's why 过 is about "ever / never", not about when, and why it attaches straight to the verb, before any object: 吃过饺子, never 吃饺子过.
